School of Chemistry and Life Sciences, Hanoi University of Science and Technology (HUST), together with Fujitsu and its Japanese partners, is advancing the application of artificial intelligence in food and beverage research and development, as well as in the training of highly qualified human resources.

On the afternoon of August 4, Hanoi University of Science and Technology held a working session with Fujitsu Limited, Headwaters Co., Ltd., Swivel & Knot Co., Ltd., and Data Impact Joint Stock Company to review the progress of their cooperation and identify future directions for research into and application of artificial intelligence (AI) in food and beverage technology. The meeting was attended by Prof. Dr. Lê Anh Tuấn, President of Hanoi University of Science and Technology; Assoc. Prof. Dr. Nguyễn Đắc Trung, Director of the External Relations Department; Mr. Doi Yuki, Vice President of Fujitsu Limited and Head of the FDE Division; and representatives of Japanese and Vietnamese technology companies. Representing the School of Chemistry and Life Sciences were Assoc. Prof. Dr. Chu Kỳ Sơn, Dean of the School; Assoc. Prof. Dr. Nguyễn Thị Minh Tú, Head of the Department of Food Engineering; leaders and faculty members from the Departments of Food Engineering and Biotechnology; and representatives of the AI4LIFE Institute for Artificial Intelligence Research and Application.

Integrating AI with Food Science
During the meeting, the parties provided updates on the implementation of their collaborative program for AI research and applications in the food and beverage sector. They also discussed initial experiences and identified priority tasks for the next phase. One of the principal areas of focus is the application of technologies such as Causal AI and AI agents to the development of food and beverage products tailored to the Vietnamese market. Under the parties’ proposal, consumer survey data, sensory evaluation results, and specialist data on raw materials, ingredients, and processing methods will be integrated to support the formulation and optimization of products. This approach is expected to shorten research and development time, improve the ability to predict acceptance among Vietnamese consumers, and enhance the efficiency of product commercialization. The implementation of these research directions will also enable faculty members of the School of Chemistry and Life Sciences to capitalize on their strengths in food technology, biotechnology, chemistry, and life sciences while expanding interdisciplinary collaboration with experts in data science and artificial intelligence. The integration of specialized expertise with emerging digital technologies has been identified as the foundation for establishing interdisciplinary research groups, generating research outputs with strong potential for practical application, and strengthening international publication capacity.

Expanding Research and Technology Transfer
Hanoi University of Science and Technology and its partners agreed to explore coordination mechanisms for implementing joint projects in food technology, biotechnology, data science, and artificial intelligence. Beyond new product development, the scope of cooperation may be expanded to include production process optimization, quality management, user behavior analysis, and supply chain efficiency enhancement. Research outcomes will be aligned with the practical needs of businesses and their potential for technology transfer. This marks the next stage of cooperation following the signing of a cooperation agreement between Hanoi University of Science and Technology and Fujitsu on March 17 concerning the development of data science and artificial intelligence projects.

Under the agreement, the two parties aim to collaborate on research, joint project development, technology transfer, and research funding. Fujitsu also plans to provide internship opportunities, scholarships, student and faculty exchanges, and support for the development of training programs aligned with industry needs. At the signing ceremony, the leadership of Hanoi University of Science and Technology stated that the partnership with Fujitsu would help bridge the gap between academic knowledge and industrial practice while training a new generation of engineers and AI specialists capable of contributing to the global innovation ecosystem. Mr. Doi Yuki highly valued the opportunity to cooperate with Hanoi University of Science and Technology and expressed his expectation that the joint programs would deliver practical outcomes, particularly by applying AI to address challenges in everyday life and industrial production.
Engaging Students in Real-World Projects
The education and development of highly qualified human resources constitute an important component of the cooperation program. Fujitsu and Data Impact plan to jointly develop internship programs and specialized training in AI and data science, enabling HUST students and graduate learners to participate in real-world corporate projects. The parties also discussed internship and employment opportunities in Vietnam and Japan, as well as plans to recruit and develop engineers with interdisciplinary expertise spanning food technology, biotechnology, and data science. For the School of Chemistry and Life Sciences, this model will strengthen the connection between education, research, and industry needs. Students will not only gain exposure to emerging technologies but will also have opportunities to participate in the entire process—from problem identification and data collection and analysis to product testing and refinement. International cooperation with a global technology corporation such as Fujitsu will also help broaden the academic environment, expand opportunities for expert exchanges and joint student supervision, and progressively develop internationally oriented research and education programs.

Towards an Interdisciplinary Research Ecosystem
The parties agreed to maintain regular meetings to review progress, evaluate results, and select research proposals with strong potential for practical application. Notable outcomes are expected to be presented at scientific and educational events, as well as activities marking the 70th anniversary of Hanoi University of Science and Technology.
Combining the specialized expertise of the School of Chemistry and Life Sciences with Fujitsu’s technology platforms and the implementation experience of the participating companies is expected to establish a sustainable model of university–industry collaboration. Through joint research projects, human resource development programs, and technology transfer activities, the School of Chemistry and Life Sciences aims to increase the number of research outcomes with both scientific and practical value, expand its international partnership network, and enhance its academic standing in food technology, biotechnology, and life sciences.
